Thrifty Chef Contest: Post Your Recipe Here!

What's better than cooking cheap and nutritious meals? Getting rewarded for it! From now until Monday, March 29 you will have the opportunity to post your favorite recipe (only one entry per person, please!) Starting on Tuesday (March 30) individuals will have the opportunity to vote for their favorite recipe. Voting will end on Monday, April 5. The entrant that receives the most votes for his or her recipe will receive a $25 gift card to be used at Olive Garden, Red Lobster, or Texas Longhorn.

    Tuna Casserole

    1 can of Golden Mushroom soup
    1 can of Cream of Mushroom soup
    1 can of Onion Soup
    4 cans of Tuna packed in water
    1 package of egg noodles
    24 slices of American Cheese

    Boil the noodles until tender.

    Heat the three soups in a sauce pan util it simmers.

    In a casserole dish, put half of the noodles on the bottom.
    and add two of the cans of tuna
    (Drain the water off of the tuna first)
    spreading the tuna over the noodles.
    Then pour half of the sauce over the noodles.

    first layer with 12 of the 24 slices of american cheese.

    This is the bottom layer.

    On top of the cheese, spread the rest of the noodles, and add the other two cans of tuna.

    Pour on the rest of the soup and cover the final layer with the remainding chees slices.

    Place in the oven uncover at 350 degrees for 20 to 30 minutes or until the top layer is slightly browned.

  2. 2 -3 jars of Muir Glen Black Bean & Corn Salsa
    (this can be substituted for homemade salsa or your favorite brand)

    chicken breasts or tenderloins(boneless/skinless) portion depends on the size of your family or if you want leftovers

    brown rice

    4 oz sour cream

    Mrs. Dash seasonings for added flavor and zest

    Red pepper flakes or red pepper

    black beans or any other beans (I've tried with black/pinto)


    Combine all ingredients in your crockpot and allow to simmer. I actually cook mine overnight at times. The dish is packed with fiber and protein. If you'd like to take it up a notch, include your favorite vegetables.
